Knife Sharpener Glossary: Grit, Bevel, Angle & Hone
Shopping for a knife sharpener shouldn’t feel like reading a foreign language.
But it often does. Product listings throw around terms like “325 grit,” “bevel angle,” and “hone” without ever explaining what they actually mean, or why they matter to you.
Here’s a plain-English glossary so you can shop, and sharpen, with confidence.
Grit
Grit refers to how coarse or fine a sharpening surface is. Lower numbers mean coarser, more aggressive material that removes metal fast. Higher numbers mean finer material that polishes and refines the edge.
- Extra coarse (270 grit): For very dull or damaged blades. Removes the most metal.
- Coarse (325 grit): The standard for most sharpening jobs, enough to restore a genuinely dull edge.
- Medium (600 grit): Refines the edge after coarse sharpening.
- Fine (1000 grit): Polishes the edge to a smooth, precise finish.
Most people only ever need coarse and maybe fine. Extra coarse is for knives that are in rough shape or have chips to grind out.
Bevel
The bevel is the angled surface at the edge of the blade: the part that’s actually been ground down to create the cutting edge. Every knife has one, whether it’s a small, steep angle (common on Western kitchen knives) or a longer, shallower one (common on Japanese-style knives).
The bevel is what a sharpener is actually working on. A consistent bevel is what makes an edge cut smoothly and predictably.
Edge angle
This is the angle at which the blade is ground, usually measured in degrees per side. A steeper angle (higher degree number) creates a stronger, more durable edge that’s better for tougher tasks. A shallower angle (lower degree number) creates a finer, sharper edge that’s better for precision cutting but can be more delicate.
Most Western kitchen knives sit around 20-22 degrees per side. Many hunting and fillet knives run similar or slightly steeper for durability.
The reason angle consistency matters so much: if one part of the blade is sharpened at a different angle than the rest, the edge won’t cut evenly. This is the single biggest reason freehand sharpening is hard to master. Human hands aren’t naturally consistent, even with practice.
Hone (and honing rod)
Honing realigns a blade’s edge without removing metal. It’s maintenance, not sharpening. A honing rod (sometimes sold as a “sharpening steel,” which causes a lot of confusion) is the tool used to do this, usually with a quick, repeated motion before or after use.
Serration
Some knives, bread knives, some hunting and fillet knives, have a wavy, saw-like edge instead of a smooth one. Serrated edges need a different sharpening approach than straight edges, usually with a rounded or tapered sharpening tool that can get into each individual scallop.
Diamond hone
A sharpening surface embedded with actual diamond particles, which are harder than steel. Diamond hones cut faster and last significantly longer than traditional sharpening stones, and they don’t wear down or need to be flattened the way natural stones do over time.
Putting it together
When you understand these terms, choosing a sharpener stops being a guessing game. You know why grit matters, why a fixed angle system takes the guesswork out of getting a consistent bevel, and why a diamond hone will outlast a traditional stone.
That’s the difference between buying a sharpener because the packaging sounded impressive, and buying one because you actually understand what it’s doing to your blade.
